• 5 medium sized potatoes
  • 1 finely chopped onion
  • 1 teaspoon dried oregano
  • 2 tablespoons white wine vinegar
  • 1 cup of Epoch extra virgin olive oil
  • Salt & freshly ground black pepper, to taste
  • A few sprigs of fresh dill to garnish

Wash the potatoes well and boil in salted water for about 30 minutes. Remove from heat and let cool a little in order to remove the skins. Cut the potatoes in cubes and add the chopped onion, oregano, vinegar, extra virgin olive oil, pepper and more salt if needed. Gently combine so all the flavours are merged without pureeing the potatoes. Last, serve in a dish and garnish with the dill.
