P.D.O. Feta Chesse From fresh sheep & goat milk
Feta is produced in Greece since ancient times. It is a brined curd cheese typically produced in blocks, from sheep’s milk and up to 30% goat’s milk. PDO (Protected Designation of Origin) in Feta cheese guarantees that the milk production, the cheese making and the total treatment of the product take place in a delimited geographic region with traditional and recognized know-how and environmental characteristics. The manufacturing facilities of our Feta PDO are located on a hill of mount Kithairon, in 400m altitude. The Feta itself is handmade and production methods are adjusted seasonally, in order to guarantee identical quality standards throughout the year, as livestock feed and climatic conditions may vary. It is salted and cured in a brine solution and it matures inside wooden barrels or tins for a period longer than 4 months.
